From Mary Carey
Ingredients:
1 head leaf lettuce (best w/ leafy lettuce, but can use iceberg)
1 medium sweet onion, sliced VERY THINLY into ringlets (or circles)
5 slices bacon (be sure to reserve pan drippings)
1/3 cup white vinegar
1/3 cup sugar
Pepper
Directions:
Place torn lettuce and onion in a salad bowl; set aside. In a skillet, fry bacon until crisp. Remove bacon and crumble it. Retain bacon drippings in pan. Set aside.
In the pan with bacon drippings, combine the vinegar and sugar. Bring to a boil (so sugar can dissolve), stirring constantly. Let cool for only one minute, so it isn’t scorching hot when you pour onto lettuce (will be warm, though). Immediately pour some “dressing” over salad and toss.
Add additional dressing if desired.
Add bacon to salad; toss well. Serve immediately.
