Ingredients
2 cups lukewarm water
2 packages active dry yeast (one small square of the three pack)
1 teaspoon sugar + ¼ cup sugar
1/3 cup dry milk
1 egg
¼ cup shortening
2 teaspoons salt
7 cups all-purpose flour
Directions
Place lukewarm water, yeast and 1 teaspoon sugar in a warmed bowl. Let dissolve for 5 minutes.
To the yeast mixture, add ¼ cup sugar, dry milk, egg, shortening and salt. Mix for one minute on speed 2 of Kitchenaid.
Add four cups of the flour and mix for two minutes.
Change to the dough hook. Gradually add remaining three cups of flour. Mix for ½ minute after each addition. Let knead for 8 minutes on speed 2. Put in large greased bowl and turn over. Cover with wet dish towel. Let rise in oven with oven light on for one hour or until double. Turn out onto floured cabinet. Divide into three pieces. Make three loaves. Put in greased pans. Let rise 1 – 1 ½ hours, or until double. Bake at 350 degrees for 15 minutes and cover with foil. Bake another 15 minutes. Turn out and rub the top with butter.
Note: This recipe can be made with a Kitchenaid mixer. It takes four hours to make, from start to finish.
