Ingredients
2 cucumbers, sliced very thin
½ cup chopped onion
Salt
Pepper
2 heaping Tablespoons sour cream
Scallions, chopped
Directions
Slice one or two cucumbers very thin and add chopped onion. Salt them and leave them in a bowl for several hours out on counter. The salt will melt and they will become juicy and “liquidy”. Do not remove liquid. To these, I add sour cream (but do not remove the liquid). I stir them up really well. Sometimes, I add a little green pepper on top to garnish. I use the green and white part of the scallions. Add some salt and some pepper to taste.
You will have to decide at this point if it looks good or too runny. If it looks too runny, you can empty some of the juice and just add a little more sour cream.
