Ingredients
1 ¼ cups graham cracker crumbs + some for top of cheesecake
¼ cup sugar
¼ cup melted butter
16 oz cream cheese (two blocks)
1 teaspoon vanilla
½ cup sugar
3 eggs
8 oz sour cream
1 teaspoon vanilla
¼ cup sugar
Directions
Preheat oven to 375 degrees. Lightly grease a 9-inch cake pan with butter. Mix graham cracker crumbs, ¼ cup sugar and ¼ cup melted butter together. Pack into cake pan.
With mixer, cream together cream cheese, 1 teaspoon vanilla, ½ cup sugar and 3 eggs. Beat until creamy. Pour over crumbs. Bake at 375 degrees for 30 minutes. Remove from oven. Let cool 15 minutes or until cake comes away from edge of pan.
Increase oven to 475 degrees. In a bowl, mix together 8 oz sour cream, 1 teaspoon vanilla, ¼ cup sugar. Pour over cake. Sprinkle cracker crumbs over top and bake 10 minutes at 475. Cool and refrigerate.
