Entree / Chicken: Joe's Grilled Chicken

Ingredients
4 chicken breast halves
1/3 part olive oil
1/3 part Lemon juice
1/3 part Tabasco sauce
McCormick’s Caribbean Jerk seasoning salt

Directions
In a large freezer Ziploc bag, place chicken breasts, olive oil, lemon juice and Tabasco sauce. Sprinkle liberally with seasoning salt. Allow the chicken to marinate overnight in the refrigerator.

When ready to prepare, you may want to sprinkle more seasoning salt on the chicken before grilling. Place on a hot grill and cook slowly. Serve with barbecue sauce, if desired.

Note: You may substitute tomato juice for the Tabasco sauce, if you wish. Although it might sound a little hot with the jerk seasoning salt and Tabasco sauce, it really isn’t hot, just flavorful. This combination: a type of oil, a citrus-based juice and a tomato-based sauce or juice seems to marinate the chicken just perfectly.
