Appetizer: Rosalind Carter's Cheese Ring

Ingredients
1 lb. sharp cheddar cheese, finely shredded
1 cup finely chopped pecans
1 cup mayonnaise
1 small onion, finely diced
¼ teaspoon black pepper
¼ teaspoon cayenne pepper
Strawberry preserves

Directions
Mix all together with exception of strawberry preserves. Place the mixture in a bundt can pan or other mold. Refrigerate 12 hours or longer before serving. Invert mold onto serving platter and fill hole with strawberry preserves.

Serve with Ritz crackers.

Note: It may sound strange to serve this cheese ring with strawberry preserves, but oddly enough, together they do compliment each other.
